Morrocan Mushrooms

 

 

2 teaspoons olive oil

1 small red onion, finely chopped

2 garlic cloves, crushed

2 teaspoons Moroccan seasoning

500 g (17 1/2 oz) cup mushrooms, thickly sliced

2 small tomatoes, finely chopped

small fresh coriander (cilantro) leaves, to serve

salt and pepper, to taste

 

 

1. Heat oil in a large frying pan over medium heat. Add onion and

garlic. Cook stirring, for 3 minutes or until onion has softened.

 

2. Add seasoniung. Cook, stirring, 1 minute or until fragrant.

 

3. Add mushrooms. Cook, stirring, for 3 to 5 minutes or until

mushrooms are golden and just tender.

 

4. Add tomato. Season with salt and pepper. Cook stirring 1 minute or

until heated through.

 

5. Top with coriander (cilantro) leaves and serve.

 

 

Serves 4.
