Guest guest Posted September 8, 2008 Report Share Posted September 8, 2008 These are great cookies: Toll House cookies (The complete guide to Wheat free cooking) 1c. shortening (I used earth balance) 1/2c. gran. sugar 1c. brown sugar 1tsp vanilla 2 eggs (I use Energy egg replacer according to package) 2/3 c rice flour (I've used both white and brown) 2/3 c bean flour (I've also used bob's GF mix 1 1/3c to replace both) 1 tsp baking soda 3/4tsp salt 2 tsp xanthan gum 6 oz choc chips 1 c nuts Preheat oven to 300, grease or parchment paper on cookie sheets, cream shortening, sugars and vanilla. Fold in eggs (replacer)and beat mixture. Mix in another bowl flours, baking soda, salt and xanthan gum. add to shortening mixture. Fold in chips and nuts. Bake for 12-15 minutes. I've also done double choc chip by adding 1/2 c. cocoa...
