Kim,

 

Thanks so much for posting this recipe. I made these

little gems twice so far and they're great! My

neighbor, who is also gluten free, loves them too.

Nut Stuffed Mushrooms.

Source: " Vegetarian Cooking Without " by Barbara Cousins (adapted).

 

 

1 to 2 flat mushrooms per person (this recipe will fill around 6

mushrooms around 2 1/2 to 3 inches (6 to 8 cm) across)

1 large onion

2 cloves garlic

a little oil for frying

1/2 cup roasted hazelnuts (walnuts work really well too. My 1/2

cup is very heaped)

1/2 tsp dried thyme

1/2 tsp dried rosemary

2 tbsp fresh herbs (I use parsley and chives in equal amounts, and

I am very generous with the amounts but don't actually measure

them)

salt and freshly ground black pepper

 

 

1. Remove stems from mushrooms, and dice stems.

 

2. Dice the onion and crush the garlic.

 

3. Fry the chopped mushroom stalks, onion and garlic in a little oil

until onion has browned.

 

4. Grind the nuts in a food processor. Add herbs and a little slurp of

olive oil.

 

5. Add onion mixture to nuts and mix together. Add salt and pepper to

taste.

 

6. Stuff mushrooms with mixture. Bake at around 400 F (200 C) for

around 1/2 an hour or until mushrooms are cooked through (Time will

depend on size of mushrooms.)

I tried the nut stuffed mushrooms on my carnivorous co-workers at a

holiday party and they were a big hit. I set it down, left the room

for a moment and they were almost all gone. I only got to eat one for

myself !!! ~ Barbara
