Guest guest Posted September 4, 2008 Report Share Posted September 4, 2008 Minted Pea Mash 700 g (24 1/2 oz) floury potatoes, peeled, coarsely chopped 2 cups frozen peas 40 g (1 1/2 oz) vegan margarine, chopped 1/4 cup milk alternative, warmed 1/4 cup chopped mint salt, to taste 1. Place potato in a large saucepan; cover with cold water. Bring to the boil over moderate heat. Boil for 15 minutes or until tender, adding peas in last 4 minutes. Drain; return to pan and place over low heat. 2. Add margarine and milk alternative; mash until almost smooth. 3. Remove from heat; stir in mint. Season to taste with salt. Serves 4.
