Guest guest Posted September 4, 2008 Report Share Posted September 4, 2008 Mash with Corn & Sweet Chilli Sauce 700 g (24 1/2 oz) floury potatoes, peeled, coarsely chopped 40 g (1 1/2 oz) vegan margarine, chopped 1/4 cup vegan sour cream 125 g (4 1/2 oz) can creamed corn 125 g (4 1/2 oz) can sweet corn kernels, drained salt, to taste sweet chilli sauce, to serve chopped chives -OR- green onion, sliced, to serve 1. Place potato in a large saucepan; cover with cold water. Bring to the boil over moderate heat. Boil for 15 minutes or until tender. Drain; return to pan and place over low heat. 2. Add margarine and sour cream; mash until smooth. 3. Remove from heat and stir in corn. Season to taste with salt. 4. Serve drizzled with sauce and sprinkled with chives or green onion. Serves 4.
