Guest guest Posted September 4, 2008 Report Share Posted September 4, 2008 Caramelised Banana Sundaes 20 g (3/4 oz) vegan margarine 8 teaspoons packed soft brown sugar 8 teaspoons orange juice two 125 g (4 1/2 oz) bananas, peeled, halved lengthwise 8 teaspoons toasted flaked almonds vegan ice-cream, to serve 1. Preheat a 25 cm (10 " ) (base measurement) non-stick electric skillet to moderate. Melt margarine. Stir in sugar until dissolved. Stir in juice. 2. Place banana, cut-side down, in sugar mixture; cook for 2 minutes. Turn; cook for 2 minutes more or until caramelised. 3. Transfer banana to plates. Drizzle with caramel sauce. Sprinkle with almonds. Serve with ice-cream. TIP: Toast almonds in skillet before cooking bananas. VARIATION: Serve bananas and sauce on GF pancakes or in crepes.
