Breakfast Lentils

Source: Fun with Natural Foods

 

 

1 cup lentils

3/4 tsp salt

1 tsp corn oil

3 cups water

pinch sweet basil (optional)

1/2 onion, chopped fine

GF Toast, spread with vegan margarine -OR- Vegannaise (vegan

mayonnaise)

 

 

1. Sort through lentils and rinse clean.

 

2. Bring water and lentils to a boil; add salt, oil, basil, and onion.

Cover and simmer for 30 to 45 minutes until lentils are tender. Add

more water if necessary to make a thick soupy consistency.

 

3. Serve hot lentils over toast spread with margarine. Top with soy

yogurt and a little chopped parsley and green onion if desired. Served

with fruit and a glass of soy milk (or rice milk), this makes a very

nutritional and satisfying breakfast or supper.
