Guest guest Posted August 24, 2008 Report Share Posted August 24, 2008 Porridge with Banana Topping 1/2 cup certified GF oats 1 1/4 cups milk alternative 1/3 cup mixed dried fruit (apricots, apple etc.) milk alternative, to serve Banana Topping: 8 teaspoons honey (-OR- vegan alternative) 8 teaspoons chopped unsalted toasted macadamia nuts 1 large banana, sliced 1. Place oats, milk alternative and fruit in a saucepan over medium-high heat. Bring to the boil. Cook, stirring, until mixture is thick and creamy. 2. Make Banana Topping: Place honey (or alternative) and nuts in a small, non-stick frying pan over medium heat. Cook, stirring, for 1 minute or until heated through. Add banana. Toss to coat. 3. Divide porridge between bowls. Top with banana topping. Serve with milk alternative of choice. VARIATION: Make porridge using other GF grains. See " Breakfast " recipes in the Files. Serves 2.
