Guest guest Posted August 24, 2008 Report Share Posted August 24, 2008 Oven-Baked Muesli 1/3 cup honey (-OR- agave nectar -OR- similar) 4 teaspoons finely grated orange rind 1/3 cup orange juice 2 cups certified GF rolled oats 1/2 cup rice bran cereal 1/2 cup shredded coconut 1/2 cup pumpkin seeds (pepitas) 1/2 cup sunflower seeds 1/4 cup sesame seeds 1/2 cup sultanas (raisins) 1/4 cup chopped dried apricots 1. Preheat oven to 200 C 400 F) or 180 C (350 F) for fan-forced. 2. Line a large, shallow baking dish with non-stick baking paper. 3. Place honey, orange rind and orange juice in a saucepan over medium-low heat. Cook, stirring, for 2 to 3 minutes or until honey has melted. 4. Combine oats, cereal, coconut, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl. 5. Add honey mixture to oat mixture. Toss to combine. Spread mixture into prepared dish. 6. Bake for 20 to 25 minutes or until golden and crisp. 7. Cool on tray. 8. Add sultanas and apricots. Stir to combine. 9. Store in an airtight container for up to 2 weeks. SERVING SUGGESTION: Serve muesli with soy/rice/nut milk, topped with soy yogurt, honey (or vegan alternative) and fresh fruit.
