Guest guest Posted August 22, 2008 Report Share Posted August 22, 2008 Old-Fashioned Potato Salad 1.5 kg (3 1/3 pounds) potatoes, peeled, cubed 4 green onions, thinly sliced 1/4 cup chopped fresh flat-leaf parsley leaves 6 pickled gherkins, finely chopped 1/2 cup vegan mayonnaise 1/2 cup vegan sour cream 8 teaspoons cider vinegar 1. Cook potato in a large saucepan of boiling, salted water for 10 minutes or until tender. Drain. Cool for 15 minutes. 2. Combine potato, onion, parsley and gherkin in a large bowl. 3. Combine mayonnaise, sour cream, 4 teaspoons hot water and vinegar in a jug. 4. Add mayonnaise mixture to potato mixture. Toss to combine. Serve. Serves 6.
