There will be a GF vegan area that addresses solutions for GF living on campus. Recipes should be have just a few ingredients; can be made in a rice cooker, microwave, or toaster oven; and are easy to put together for the beginning cook. It would be extra helpful if the recipes are currently college student favorites. I will also be publishing a question and answer blog for concerns about foodservice and would really appreciate the input of parents or students. I will be featuring positive solutions to currently limiting circumstances. Thank you for your time and any recipes you wish to offer up. First, I would recommend two more pieces of equipment to the college student: a blender (handheld immersion blender is fine) and a food processor (just the little handheld, spring powered ones is okay.) So, moving on: Breakfasts: - fruit and nuts (preferably a couple of cut up fruits with nuts sprinkled over top, but in a rush, pop a couple of fruits and a pre-measured baggie of nuts into your bag on the way out the door) - smoothie - gf oatmeal (in the microwave or in the rice cooker) - other hot grains/cereals - buckwheat, quinoa, millet, rice, etc. with a bit of fruit and cinnamon or in a savory dish with veggie ham (my asian market has gluten-free veggie ham or chicken) - gf toast, bagels, muffins, etc. (expensive) - cold gf cereal such as puffed rice, envirokids, etc. with soy or alternative milk - peanut butter and banana on a rice cake - scrambled tofu (mashed tofu in the microwave with some spices and veggies) - fruit and soy or alternative yogurt - gf waffles or waffle sandwiches Lunch (several selections from below): - any leftovers from supper, in a thermos (if hot) or bowl - big green salad - bean or grain based salads - gf sandwich, etc. (expensive) - peanut butter and banana on a rice cake - raw veggies - raw fruit - fruit and soy or alternative yogurt - trail mix - chili - curry - soup - hummus on rice cake/rice crackers/veggies Supper: - anything listed under lunch - chili in the microwave or rice cooker - curry in the microwave or rice cooker - soup in the rice cooker (use your immersion blender) - pasta in the rice cooker (rice noodles, bean thread noodles, many other kinds) - potatoes in the microwave or toaster oven - hash browns/fries in the toaster oven - gf waffles - grain pilafs in the rice cooker - rice, quinoa, millet, buckwheat, etc. - " stir fry " veggies in the microwave or rice cooker Some good sources for recipes (other than this list!) would be Fuhrman's " Eat to Live " (not quite vegan or gluten free, but very close and most recipes adaptable), raw diet recipes (the simple ones; I don't know if you can dehydrate in a toaster oven, can you?) Particularly watch for recipes that have been suggested for travelers and campers. Is this the intent of this group? Not only are your sites trying to sell something, but you are soliciting from this group to add to your products.
