Warn Quinoa Salad with Toasted Almonds 1/1/2 cup quinoa 2 1/2 cups water 2 Tbs tamari or braggs 1 Tbs rice vinegar 1 tsp sesame oil 1 tstp grated peeled fresh ginger 2 green onions thinly sliced diagonally 1/4 cup sliced natural almonds, toasted take quinoa and put it in a skillet on high for about 5 minutes to toast it. Then add water into the toasted quinoa. Heat to boiling on high and reduce heat to low. cover and simmer for approx 15 minutes until all of the water is absorbed. While the quinoa is cooking use a small bowl to stir together tamari or Braggs, rice vinegar, 1 sesame oil, grated peeled fresh ginger and green onions .. Transfer the quinoa to a large serving bowl and stir in the soy sauce mixture until the quinoa is evenly coated. Sprinkle with sliced almonds . Modification: This evening I didn't have any green onions so I threw half of a chopped red onion into the quinoa when I added the water so that both ingredients cooked together. I also added some shredded raw spinach to the soy sauce mix to add some green. It wilted when I poured it into the hot quinoa and the dish tasted great this way too. I didn't have sliced raw almonds so I toasted some of my whole almonds, crushed them and sprinkled them over the top. The dish was a hit with my kids and husband. Hope your family loves it too.
