Guest guest Posted June 14, 2008 Report Share Posted June 14, 2008 Silverbeet with Orange and Currants 8 teaspoons currants 1/4 cup orange juice 1 bunch silverbeet, trimmed 2 teaspoons olive oil 2 garlic cloves, crushed 1 teaspoon finely grated orange rind 8 teaspoons slivered almonds, toasted 1. Place currants and juice in a microwave-safe bowl. Microwave, uncovered, on MEDIUM (50%) for 1 minute or until heated through. 2. Separate silverbeet leaves from stems. Chop stems. Roughly tear leaves. 3. Heat oil in a large frying pan over medium heat. Add garlic and silverbeet stems. Cook for 3 to 4 minutes or until stems are just tender. 4. Add currant mixture and orange rind. Stir to combine. 5. Add leaves. Cook, stirring, for 2 to 3 minutes or until wilted. 6. Season with salt and pepper. Top with almonds. Serve. Serves 4.
