Guest guest Posted June 12, 2008 Report Share Posted June 12, 2008 Creamy Chocolate Rice Pudding 1/2 cup arborio rice 8 teaspoons cocoa powder, sifted 1 teaspoon vanilla bean paste 4 cups soy milk 1/4 cup sugar 8 teaspoons flaked almonds, toasted 1. Place rice in a heavy-based saucepan. 2. Whisk cocoa, vanilla and 1/4 cup soy milk together in a large bowl. 3. Add sugar and remaining milk. Whisk until well combined. 4. Add milk mixture to rice. Bring to the boil over medium heat, stirring often. Reduce heat to low. Cover. Cook, stirring occasionally, for 40 to 50 minutes or until rice is tender. 5. Serve topped with almonds. Serves 4.
