Pea Puree

 

 

l 3/4 cups frozen peas

2/3 cup chicken-style stock

2 teaspoons vegan margarine

 

 

1. Combine ingredients in a small saucepan. Cover; bring to boil over

moderate heat. Reduce heat; simmer 5 minutes.

 

2. Cool slightly then process in a food processor until smooth.

 

3. Season to taste with salt and black pepper.

 

 

 

TIP: For a coarse texture, mash with a fork.

 

VARIATION: Add chopped mint or parsley.

 

 

 

Serves 2.
