Guest guest Posted May 30, 2008 Report Share Posted May 30, 2008 Macro Cafe's Pumpkin Soup Source: Macro Wholefoods Market specials brochure. 1 kg (35 oz)organic Jap pumpkin (kaboucha squash), diced 500 g (17 1/2 oz) organic potatoes, diced 500 g (17 1/2 oz) organic carrots, diced 1 teaspoon organic ginger, grated 4 teaspoons organic sunflower oil 2 sprigs of fresh organic rosemary 1/2 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon cinnamon water to cover salt and pepper to season 1. Heat the organic sunflower oil in a saucepan over medium heat. Sweat organic pumpkin, organic potatoes and organic carrots. 2. Increase heat to medium-high, add spices and cook for around 1 minute. 3. Add enough water to cover vegetables. Bring to the boil. Reduce heat to medium-low and simmer, covered, for around 30 minutes. 4. Puree soup in food processor. 5. Season with salt & pepper. Serve with organic (GF) crusty bread and enjoy!
