Oops! Updated GF brownie recipe

Sorry everybody--I forgot to list the teaspoon of guar gum I used in the

brownies. (Half a teaspoon of xanthan gum would also work fine, but I use

guar gum because I can get it so much cheaper).

 

The updated recipe is as follows:

 

Secret Recipe Brownies (Robin's concoction)

 

Place in blender:

 

3 bananas, ripe (or use 2 eggs, omitting flax and increasing sugar to 1 cup)

 

2 cups frozen spinach, thawed (in microwave is fine)

 

¼ cup water

 

1 teaspoon vanilla

 

2 tablespoons oil

 

 

 

Combine in mixing bowl:

 

¼ cup flax seed meal

 

¾ cup cane juice crystals (or sugar; make it a full cup if you like them

sweet)

 

1 cup GF flour mix (I used a mixture of rice flour, potato starch, and

tapioca flour, but I bet that sorghum or teff would work well on their own,

too)

 

¾ cup cocoa powder

 

2 teaspoons baking powder

 

1 teaspoon guar gum (or ½ teaspoon xanthan gum)

 

½ teaspoon salt

 

Chopped nuts, optional (however much you like, maybe ½ cup or so)

 

 

 

Blend liquid ingredients with bananas and spinach in the blender. In a

mixing bowl, combine dry ingredients. Pour in liquid mixture and stir until

combined. Pour into a greased 8 x 8 pan and bake at 350F for about 30

minutes, or until center is just set. Cool slightly before cutting.

With that much banana and flax, I should think the xanthan or guar

would be necessary :-)
