Guest guest Posted May 13, 2008 Report Share Posted May 13, 2008 Baked Zucchini with Lemon and Mint 4 medium zucchini, halved lengthways, roughly chopped 1 small red onion, halved, thinly sliced 4 teaspoons finely grated lemon rind 1/4 cup lemon juice 4 teaspoons olive oil 8 teaspoons small fresh mint leaves 1. Preheat oven to 220 C (430 F) or 200 C (400 F) for fan-forced. 2. Place zucchini, onion, lemon rind, lemon juice and oil in a baking dish. Season with salt and pepper. Toss to combine. 3.
