Guest guest Posted May 8, 2008 Report Share Posted May 8, 2008 Microwave Corn with Honey Mustard Butter 4 corn cobs, husks on 60 g (2 oz) vegan margarine (see Tip) 4 teaspoons honey (-OR- vegan alternative such as agave nectar) 3 teaspoons Dijon mustard 8 teaspoons flat-leaf parsley leaves, chopped 1. Peel back corn husks and remove silks. Re-tie corn husks with un-waxed string. Soak corn in a bowl of cold water for 5 minutes. Remove. Shake off excess water. 2. Place corn, on a microwave-safe plate. Microwave on HIGH (100%) for 5 minutes. Turn corn over and microwave on HIGH (100%) for a further 5 minutes. Stand for 5 minutes. 3. Using a wooden spoon, beat margarine, honey (or alternative), mustard, parsley and salt and pepper together until combined. 4. Carefully remove husks from corn. Cut corn in half. Place in a bowl. Add butter mixture and turn to coat. Serve. NOTE: If corn husk has already been removed, wrap each washed cob in plastic wrap. Microwave. Remove plastic carefully. TIP: For a healthier choice, replace the margarine with 1/4 cup olive oil. Whisk oil and other ingredients in a bowl until well combined before pouring over hot corn. Serves 4.
