Guest guest Posted May 6, 2008 Report Share Posted May 6, 2008 I just made the coconut blast frosting for a birthday cake for my daughter and it's wonderful. A bit moist, but very tasty and pretty. It was from the Guilt free Gourmet 1 cup water 3/4 cup unsweetened coconut 1 TBSP cornstarch 1/3 TBSP honey or agave or vegan alternative I blended it in my vitamix until very smooth and creamy. I let it keep blending until it was warm and thickened. If you don't have a vitamix you can blend the ingredients and then heat them in a saucepan to thicken - stirring constantly. Allow the frosting to cool. Double the recipe for a layer cake or sheet cake. In a message dated 5/5/2008 8:55:07 P.M. Place sesame seeds in a non-stick frying pan over medium heat and cook, stirring, for 2 to 3 minutes or until lightly toasted. Remove from heat and set aside. 2. To make the dressing, combine the lemon juice, peanut oil, sesame oil, ginger and sugar in a jug. Taste and season with salt and pepper. 3. Place the toasted sesame seeds, carrot and bean sprouts in a medium bowl. Drizzle with the dressing and gently toss to combine. 4. Divide salad among bowls and serve immediately.
