coconut blast frosting

I just made the coconut blast frosting for a birthday cake for my daughter

and it's wonderful. A bit moist, but very tasty and pretty. It was from the

Guilt free Gourmet

 

1 cup water

3/4 cup unsweetened coconut

1 TBSP cornstarch

1/3 TBSP honey or agave or vegan alternative

 

I blended it in my vitamix until very smooth and creamy. I let it keep

blending until it was warm and thickened.

 

If you don't have a vitamix you can blend the ingredients and then heat them

in a saucepan to thicken - stirring constantly.

 

Allow the frosting to cool.

 

Double the recipe for a layer cake or sheet cake.

8 teaspoons sesame seeds

4 teaspoons peanut oil

cook, stirring, for 2 to 3 minutes or until lightly toasted. Remove

oil, ginger and sugar in a jug. Taste and season with salt and pepper.

 

3. Place the toasted sesame seeds, carrot and bean sprouts in a medium

bowl. Drizzle with the dressing and gently toss to combine.

 

4. Divide salad among bowls and serve immediately.

when you say unsweetened coconut, do you mean flakes? raw coconut?

flour? milk?

I used organic dehydrated unsweetened coconut flakes - I suspect raw coconut

would work too

 

I might try adding cocoa powder in the future to see what happens.
