Guest guest Posted May 7, 2008 Report Share Posted May 7, 2008 Nacho Bites 1 avocado, halved, stone removed, peeled, coarsely chopped 4 tsp finely chopped red onion 2 tsp fresh lime juice 24 white corn chips 1 cup refried beans with chilli 1/2 cup vegan sour cream 6 cherry tomatoes, cut crossways into 24 slices fresh coriander (cilantro) leaves, to serve 1. Combine the avocado, onion and lime juice in a small bowl. Season with salt and pepper. 2. Arrange the corn chips on a serving platter. Top each chip with 2 teaspoons of refried beans and spread to edges. Top each with 1 teaspoon of the avocado mixture, 1 teaspoon of sour cream, 1 tomato slice and a coriander (cilnatro) leaf. Serve. NOTE: You can prepare this recipe to the end of step 1 up to 2 hours ahead. Cover with plastic wrap and place in the fridge. Continue from step 2 up to 30 minutes before serving. Makes 24.
