Guest guest Posted May 6, 2008 Report Share Posted May 6, 2008 Bubble and Squeak Bubble and squeak (sometimes just called bubble) is a traditional English dish commonly made with the shallow-fried leftover vegetables from a roast dinner. 3 medium washed potatoes, peeled and chopped 150 g (5 1/3) sweet potato, peeled and chopped 1 small carrot, peeled and chopped 1/4 cup frozen peas 4 teaspoons dried GF breadcrumbs salt and cracked black pepper 1. Place the potatoes, sweet potato, carrots and peas in a steamer and steam until tender. 2. Remove and place in a large heatproof bowl. Set aside for 5 minutes. 3. Mash roughly. Stir through breadcrumbs. 4. When cool enough to touch, take 1/3 cup of the mixture and shape into rough rounds. 5. Heat a little oil in a large non-stick frying pan over medium heat. Cook each cake for 2 to 3 minutes or until golden brown. VARIATIONS: Try other vegetables like pumpkin, zucchini or broccili flowerets. Serves 4.
