Guest guest Posted April 22, 2008 Report Share Posted April 22, 2008 Wild Rice Pilaf with Cashews 1/4 cup vegan margarine (or olive oil) 1/3 cup chopped onion 1 cup long grain wild rice 2 cups vegan chicken-style broth 1/2 tsp. salt 1/2 cup chopped cashews Melt margarine in a saucepan and cook onion until tender, Add rice and stir. Cover with chicken-style broth and sprinkle with salt. Cover and simmer for 30 - 40 minutes or until all liquid is absorbed. Some rice takes longer than others so check rice frequently towards the end of cooking time. Sprinkle with cashews just before serving.
