Guest guest Posted April 21, 2008 Report Share Posted April 21, 2008 Easy Vegetarian Chili 1 cup minced onion 1/2 cup minced celery 1/3 cup green bell pepper -- minced 1 tablespoon minced garlic 1/2 cup apple juice or water 1/2 cup diced canned green chiles 3 cups chopped tomatoes 3 cups cooked pinto beans 2 teaspoons cumin 1 teaspoon chopped cilantro 1 tablespoon cumin powder -- or to taste 2 teaspoons dried oregano 2 cups water 3 tablespoons tomato paste Directions: In a large stockpot or Dutch oven over medium-high heat, cook onion, celery, bell pepper, and garlic in apple juice for 10 minutes. Add chiles and tomatoes and cook 3 minutes. Add beans, cumin, cilantro, chili powder, oregano, the water, and tomato paste. Raise heat to high, bring to a boil, then lower heat to medium.
