Guest guest Posted April 20, 2008 Report Share Posted April 20, 2008 Orange Almond Frozen Pudding Dessert Source: www.all-creatures.org 1 cup water 12 dates, pitted and dried 4 bananas 6 oz. orange juice, frozen concentrate 1 tsp. guar gum, powdered (may substitute xanthan gum) 3/4 cup almonds Place all the ingredients, except the almonds, in the container of a high powered blender (Vita-Mix type) in the order listed above. Install the cover and insert the " tamper/mixing stick " (make sure it's the one supplied by the manufacturer, and that it cannot reach the blades). Start the blender at slow speed and quickly increase to the highest speed, in stages. Assist the mixing as necessary with the " tamper/mixing stick " . Remove the " stick " and allow the mixer to suck air into the vortex. When the mixture has become very thick, stop the mixer. Add the almonds, start the mixer on slow to medium and work the Almonds into the mixture with the aid of the " tamper/mixer stick " . When the almond pieces are the desired size and uniformly distributed, stop the mixer. Pour into 4-oz. plastic cups with lids (Dixie type), or into " ice-cream-on-a-stick " molds. Place in freezer.
