Brown Rice and Sprout Pilaf

Source: Sunset Low Cost Cookery

 

1 large onion, finely chopped

1 cup coarsely shredded carrots

4 tablespoons margarine

1 cup regular brown rice

2 cups lentil or immmature mung bean sprouts

( or 4 cups commercial size bean sprouts )

1/2 cup minced parsley

 

In a pan saute onion and carrot in butter until soft. Stir in

rice; continue to cook, stirring over medium high heat , until

rice begins to slightly brown. Add chicken broth, cover and

simmer 45 minutes or until rice is tender and liquid is

absorbed. Stir in sprouts and parsely and remove from heat.

 

Makes 4 to 6 servings
