Guest guest Posted April 20, 2008 Report Share Posted April 20, 2008 Brown Rice and Sprout Pilaf Source: Sunset Low Cost Cookery 1 large onion, finely chopped 1 cup coarsely shredded carrots 4 tablespoons margarine 1 cup regular brown rice 2 cups lentil or immmature mung bean sprouts ( or 4 cups commercial size bean sprouts ) 1/2 cup minced parsley In a pan saute onion and carrot in butter until soft. Stir in rice; continue to cook, stirring over medium high heat , until rice begins to slightly brown. Add chicken broth, cover and simmer 45 minutes or until rice is tender and liquid is absorbed.
