Guest guest Posted April 20, 2008 Report Share Posted April 20, 2008 Tofu Cheezcake 1 cup pineapple juice concentrate 1/4 cup apple juice concentrate 3 Tbsp. vegan gelatin 1/2 cup cashews, raw 1/3 cup liquid sweetener of choice 1 1/2 pkgs. (12.3 oz) Mori Nu tofu 1 cup coconut milk 2 tsp. vanilla 1/2 tsp. lemon juice 1/2 tsp. salt In a saucepan, heat up juice concentrates and jel just until boiling. In a blender, blend the cashews and juice mixture together until smooth. Add the rest of the ingredients and blend until thoroughly blended. Pour into prebaked pie crust of choice.
