Here in Australia and also in the UK and New Zealand, cordial is a

non-alcoholic sweet fruit flavoured concentrate which is diluted with

water (or sparkling water) for drinking.

 

 

 

Berry Cordial

 

 

500 g (17 1/2 oz) frozen mixed berries, thawed

2 teaspoons tartaric acid (see Note)

1/2 cup lemon juice

1 1/2 cups sugar

1 cup boiling water

 

 

l. Place berries, tartaric acid, lemon juice and sugar in a heatproof

bowl. Add boiling water. Stir until sugar has dissolved.

 

2. Strain through a sieve, pressing with the back of a spoon, into a

large, heatproof jug.

 

3. Pour into hot, sterilised bottles and seal.

 

4. Refrigerate until chilled.

 

5. To Serve: Use 1/3 cup cordial to 1/3 cup chilled sparkling mineral

water or iced water. Serve with frozen raspberries.

 

 

 

NOTE: Tartaric acid is a plant-derived preservative that prevents

sugar crystallising and enhances flavour.

 

 

 

Makes 3 cups of cordial.

Ooops !!! Step 5 should read " Use 1/3 cup cordial to 2/3 cup chilled

sparkling mineral water or iced water " in this recipe and also the

Lemon Lime Cordial.
