Guest guest Posted April 18, 2008 Report Share Posted April 18, 2008 Easy Satay Noodles 6 teaspoons crunchy peanut butter 4 teaspoons sweet chilli sauce 4 teaspoons salt-reduced GF soy sauce 100 g (3 1/2 oz) dried rice stick (pad Thai) noodles 1 teaspoon peanut oil 1/2 small red onion, cut into thin wedges 1 small carrot, cut into matchsticks 50 g (1 3/4 oz) snow peas, trimmed, sliced fresh coriander (cilantro) leaves, to serve 1. Combine peanut butter, sweet chilli sauce, soy sauce and 4 teaspoons cold water in a bowl. 2. Place noodles in a heatproof bowl. Cover with boiling water. Stand for 4 to 5 minutes or until tender. Using a fork, separate noodles. Drain. 3. Meanwhile, heat a wok over high heat. Add the oil. Swirl to coat. Add onion to wok. Cook for 2 to 3 minutes or until softened. 4. Add carrot and snow peas. Cook for 1 minute or until just tender. 5. Add noodles and peanut butter mixture. Cook for 1 to 2 minutes or until heated through. 6. Serve topped with coriander (cilantro) leaves. Serves 2.
