Guest guest Posted April 18, 2008 Report Share Posted April 18, 2008 Gingered Carrot and Spinach Supreme Makes 6 servings 1/2 cup scallion sliced 2 garlic cloves, minced 1/2 teaspoon turmeric 2 tablespoons olive oil 3 cups carrots coarsely grated 1 celery rib, grated 1/2 cup vegetable stock 1 teaspoon ginger root grated fresh 1/2 teaspoon coriander powder 1/2 cup coconut grated fresh, * 1 1/4 cups frozen leaf spinach thawed and drained Saute scallions, garlic and turmeric in oil until scallions are soft.
