Seasoned Tofu Cottage Cheese

Source: Natural Lifestyle and Your Health

 

4 cups mashed tofu

1 1/2 t. salt

2 1/2 t. onion powder

1/2 t. garlic powder

3/4 cup soy mayonnaise

1 T. dried parsley

2 T. chives

 

Rinse, drain and mash tofu. Measure 4 cups into bowl. Add remaining

ingredients and mix well. Chill.

 

Menu ideas:

 

*Serve on lettuce leaf with tomato wedges.

*Sandwich: with lettuce, sprouts, tomatoes.

*Stuffed tomato and stuffed celery

*As a tossed salad

I just bought some Cottage " salad " made with mostly tofu from Whole Foods. I

don't remember the name brand. I think it's out of Austin, TX. I usually buy

their Tofu " No Egg " salad and it's amazing. This stuff is also amazing, and has

much lower soy protein, just 7 grams per serving instead of the nearly 30 in the

No Egg salad. I will try to make this recipe below.

 

With the stuff I just bought, I put it in spaghetti sauce and added some

" parmesan cheese. " It tasted just like lasagna filling, and lighter than the

usual filling I make with cashews.
