Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Corn Meal Dumplings ** These dumplings are great in soups or a pot of red beans. 1 Cup Cornmeal 1/2 teaspoons Sea Salt 1 Teaspoon Baking Powder 1 Package (10.5 ounces) extra firm Tofu In a mixing bowl, combine the cornmeal, salt, and baking powder. Blend the tofu in a blender or a food processor until it is smooth and creamy. Use a rubber spatula, if necessary, to scrape the sides of the container so that the tofu is well blended. Add the blended Tofu to the cornmeal mixture and mix well. Drop the dough by the Tablespoon into a kettle of gently boiling stew or beans. Cover and cook over medium heat for 10 minutes. To test for doneness, scoop out one of the dumplings and slice it. The inside of the dumpling should be beadlike, not gritty. Quote Link to comment Share on other sites More sharing options...
