Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Lemon Pie Source: Natural Lifestyle and Your Health 2 cups pineapple juice 1/4 cup lemon juice 1/4 cup honey 1 - 10 inch baked pie shell (gf) Dash of salt 3 Tbsp. grated lemon rind 1/3 cup cornstarch or Arrowroot powder Combine filling ingredients in saucepan and bring to boil over medium-high heat, stirring constantly. Remove from heat, cover and pour into baked pie shell. Chill. Serve with sliced bananas or sprinkle top with nuts or coconut.
