Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Fiesta Rice Bring the following to a boil in a saucepan: 2 1/2 cups water 3/4 tsp. salt Then add the following: 1 cup brown rice Reduce heat to lowest setting. Simmer covered 50 minutes or more, if at all possible, until water is used up and rice is tender. Then stir in: 1 cup tomato puree 1/2 c. finely chopped onion 1/2 c. chopped black olives 1 - 4 oz. jar pimentos 1/2 tsp. cumin 1/4 tsp. garlic powder Continue cooking on lowest setting 20 minutes, stirring occasionally to prevent burning.
