Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Curried Quinoa Source: The 20/30 Fat and Fiber Diet Plan 1 onion, chopped 3 cloves garlic, minced 2 teaspoons mild curry powder 1 tablespoon minced fresh ginger 1 pinch cayenne pepper, or to taste 2 1/2 cups vegetable bouillon 1 cup quinoa, uncooked 1/2 cup golden raisins 1/2 cup dried apricots, cut into small pieces 2 cups frozen green peas Cook the onion, garlic and curry powder in 1/2 cup of the bouillon in a large saucepan over medium heat until softened, about 5 minutes. Stir in the remaining 2 cups of bouillon, the quinoa, raisins and apricots. Bring to a boil, reduce heat and simmer 15 to 20 minutes or until most of the liquid is absorbed and the quinoa is tender.
