Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Pan-Browned Potatoes with Red Pepper and Whole Garlic Source: Bon Appetit, March 1999 2 tablespoons olive oil 12 whole garlic cloves 2 pounds russet potatoes, peeled and cut into 1/2 " pieces 1 large red bell pepper, cut into 1/2 " pieces Heat oil in a large nonstick skillet over medium-low heat. Add garlic. Saute until pale golden, about 10 minutes. Increase heat to medium. Add potatoes. Cook until golden, stirring every 5 minutes for about 15 minutes. Stir in bell pepper.
