Vidalia Guacamole

Source: Bland Farms

 

1 tomato, chopped fine

2 avocados, mashed

1/2 cup vidalia sweet onion, minced

1 jalapeno pepper, minced (may use up to two peppers)

1/2 lime, juiced

1 tablespoon oil

2 tablespoons vegetable juice

salt to taste

 

In food processor or by hand, mix all ingredients. Put in a small

bowl, cover and chill at least 1 hour before serving.

Here in KALIfonica there iz a tree known as CA Bay Laurel that grows

throughout the state. It is related to the avacado and has fruit that is more

spicy than avacado. It's leaves are spicier than European Bay leaves and 6 are

too many for spegehtti sauce! Two or three would be better. The fruit can

replace avacado, but doesn't store well. The nut inside the fruit is like a

coffee bean and is in- between coffee and chocolate. The caffiene -like rush is

short lived. The CA bay tree likes to grow near oaks, and will repell many

insects. However, honeybees like them and collect pollen from them. Bay leaves

are good for keeping weevils out of flour. The CA Bay Laurel can be put into a

Guacamole by blending tomatoe, onions, cilantro, chile and lime.

 

The acorns from Valley Oaks are very nutritious and could replace grains, in

fact even though it is considered a nut the acorn is more akin to corn than to

almonds and walnuts, and native peoples have used acorns as the primary staple

food for thousands of years. It is good for making tortillas. Acorns are

completely gluton free!

You harvest acorns when the acorns turn brown onto the ground or tarps by

shaking limbs etc. Then peel grind or smash and leach- over night in cheeseloth

in running water. Then you can dehydrate it and store it. Place several dried

CA Bay leaves on top in a metal container to keep rodents and weevils out.

 

You can grow mugwort to use to repel bugs also. It has been used to make a

wash for keeping flies offf of horses, but you wouldn't want to put this in your

food. Instead stuff a sock full of mugwort and you can use it as a pillow it

you want to dream. Mugwort may contain halucinogenic properties to be careful

about when using. Several of those socks should be placed on the container and

the camphor like smell will keep your acorns free of worms and bugs, when the

bay leaves are also used.
