Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Brown Rice Burgers Source: Meatless Burgers Yield: 6 - 8 burgers This is a good way to use up leftover brown rice 3 cups cooked brown rice 1/2 pound tofu 3/4 cup chopped onion 1/2 cup pecan meal, or finely chopped pecans 1/4 cup chopped parsley 2 cloves garlic, pressed or minced 1 teaspoon basil 1 teaspoon salt 1/2 teaspoon oregano Preheat the oven to 350 degrees F. Coarsely chop the rice in a food processor. Blend the tofu in a food processor to the consistency of ricotta cheese. Mix all the ingredients together, and form into burgers. Arrange the burgers on an oiled baking sheet, and bake for 15 minutes each side, or until browned. Let cool slightly before removing from the baking sheet.
