Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Banana Date Cookies Source: Five Loaves 3 large ripe bananas 1/2 tsp. salt 1 Tbsp. vanilla 2 cups oats (gluten free if necessary) 1 cup chopped dates 1 cup raisins or currants 1/2 cup dried papaya and pineapple chunks 1/2 cup chopped walnuts (optional) Peel and mash bananas in a mixing bowl with a potato masher. Add remaining ingredients and mix well. Drop onto a cookie sheet with two spoons or a small scoop. Keep mounded up rather than flattened. Bake at 350 degrees for 20 - 30 minutes.
