Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Bean Tortilla Chip Bake Source: 3ABN 2 15-oz. cans chunky Italian style tomato sauce 1 6-oz. jar black pitted olives, sliced 1 cup water 3 cups cooked pinto beans 1 8-oz. bag baked tortilla chips In a large bowl mix together tomato sauce and water; set aside. In a large 13x9 glass baking dish pour 1/2 cup of sauce over mixture. Crumble 1 cup chips and set aside for topping. Place tortilla chips on bottom and sides of dish. Pour beans on top of chips. Add sliced olives, saving some for garnishing. Pour sauce over chips and olives. Top with crushed chips and sliced olives. Cover and bake at 523 degrees for 35 minutes. Remove, cover and bake 10 more minutes. Serves 6 - 8. Quick Alternate Method: 3 15 oz. cans of pinto beans, rinsed, can be used to replace cooked beans.
