Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Millet-Miso Burgers Source: Meatless Burgers Barley miso adds rich flavor and dark color to this meatless burger. 1/4 pound tofu 2 cups cooked millet 3/4 cup chopped onion 1/2 cup grated carrot 1/2 cup chopped celery 1 clove garlic, minced 2 tablespoons miso 2 tablespoons nutritional yeast 1 teaspoon cumin Preheat the oven to 350 degrees F. Blend the tofu to the consistency of ricotta cheese. Mix all the ingredients together, and form into burgers. Arrange the burgers on a lightly oiled baking sheet, and bake for 15 minutes on each side, or until browned. To cook millet: Toast 1/2 cup millet in a pan until it begins to give off a nutty aroma. Add 1 cup boiling water, and return to a boil. Reduce the heat to a simmer, cover, and cook for about 20 minutes. Turn off the heat and let it stand for about 10 minutes, then fluff the millet.
