breakfast sausage???

Does anybody have a good recipe for a breakfast sausage? I have been

trying to find one but the few I found sound like they would be really

spicy and are unappealing as a breakfast or light meal. I know

gardenburger did have a breakfast sausage, but they where never

available in my area except once when they first came out, and now

Morning Star owns the company,and they are glutenating everything! So

be aware if this is a product you've used, it will soon be gone if it

hasn't disappeared in your area yet!

Tempeh and White Bean Sausage Patties Recipe #223843

 

 

45 min | 25 min prep | 10 patties

 

 

1 lb (450 g) GF tempeh, crumbled into bite-sized pieces

4 teaspoons tamari or soy sauce

1 cup cooked white beans

3 tablespoons (45 ml) olive oil

2 garlic cloves, minced

1 teaspoon fennel seeds, crushed

1 tablespoon (3 tsp) chopped fresh thyme

1 teaspoon chopped fresh sage

1 pinch ground cayenne pepper

1 pinch ground nutmeg

1 tablespoon (3 tsp) tomato paste

1/4 cup plain GF breadcrumbs

1 dash salt

3 dashes black pepper

 

 

1. Place the tempeh in a saucepan and just barely cover it with water

(it's okay, even preferable, if some of the tempeh is peeking out of

the water). Add 1 teaspoons of the tamari, cover and bring to a boil.

simmer for about 15 minute or until most of the water is absorbed.

drain any remaining water and transfer the tempeh to a large bowl. Add

the white beans, give a quick stir, and set aside. This will heat the

beans just a bit for easier mashing and cool the tempeh down just a

bit for easier handling.

 

2. Give the saucepan a quick rinse and dry. saute the garlic and

fennel seed in 1 tbsp olive oil over low heat, just until fragrant

(about 1 minute). Add the remainder of the spices and stir constantly

for 30 seconds. Add to the tempeh mixture along with the tomato paste

and remaining tbsp of tamari.

 

3. Mash everything together with a potato masher or a fork, until it's

just a bit chunky and there are no whole beans left. (You don't want

it pureed, you should still be able to see the beans). Add the bread

crumbs and combine well with a fork. Taste for sat and spices and

adjust to your liking. Let sit for about 15 minutes to let the flavors

meld.

 

4. Form into patties, using 3 tbsp worth of the mix. Heat the

remaining 2 tbsp of olive oil over medium heat. Cook the patties until

brown, about 3 minute each side. You may need to add a little more oil

when you flip them.

If you can eat soy, " Vegan With A Vengeance " has a great Tempeh Sausage Crumples

recipe. It is amazing!

Vegan Seasoned Faux " sausage " Patties Recipe #33763

 

 

25 min | 10 min prep | 5 -10 patties

 

 

3/4 cup boiling water

2 tablespoons (30 ml) GF soy sauce

1 cup GF textured vegetable protein, granules

1/2 cup firm tofu, mashed up

2 teaspoons marjoram

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon thyme

1/2 teaspoon salt

1/2 teaspoon red pepper flakes

black pepper, for taste

1 teaspoon liquid smoke

1/2 cup GF flour

 

 

1. In a bowl, pour the water and soy sauce over the TVP.

 

2. When soft add the other ingredients except the gluten and mix well.

 

3. When the mixture is cooled, add the gluten flour.

 

4. Mix well with your hands and form into 10 thin patties (I get 5).

 

5. Steam-fry in two batches in a heavy skillet sprayed with PAM until

firm and browned, 7 to 10 minutes per side.

 

6. These can be refrigerated or frozen for later use.

 

7. I place them on a baking sheet and freeze them and then place them

all in a freezer bag.

 

8. For a quick sandwich, put them in the microwave for about 1 to 2

minutes, depending on the microwave, then make a sandwich with your

favorite additions.

 

9. In a bowl, pour the water and soy sauce over the TVP.

 

10. When soft, add other ingredients (except the gluten) and mix well.

 

11. When the mixture is cooled, add in the gluten flour.

 

12. With your hands, mix well, forming into 10 thin patties (or 5).

 

13. In a heavy skillet, spray with PAM.

 

14. In 2 batches, steam fry until browned & firm, 7 to 10 minutes per

side.

 

15. You may use right away, or store in the freezer for other occasions!

 

16. These can be refrigerated or frozen, carefully, for later use.

Thanks for the recipes. I finally found all the ingredients so now I can

finally try them out!
