Guest guest Posted March 20, 2008 Report Share Posted March 20, 2008 Steamed Asparagus with Lemon and Olive Dressing 1 bunch asparagus, trimmed 1/2 red onion, thinly sliced 1 lemon, rind finely grated, juiced olive oil 8 tsp finely chopped fresh herbs 1/4 cup mixed marinated olives, pitted,roughly chopped lemon wedges, to serve 1. Preheat the oven to 200 C (400 F) fan forced. 2. Place the asparagus onto a sheet of baking paper, top with red onion and half the lemon rind. Drizzle with olive oil and a little lemon juice, season with salt and pepper. 3. Fold the paper over to enclose the mixture, fold in edges to make a bag. Place on a baking tray. 4. Bake for 6 to 8 minutes or until tender. 5. Combine the remaining lemon juice, herbs and olives in a bowl, season with salt and pepper. 6.
