Mixed Mushroom Crepes

 

 

50 g (13/4 oz) vegan margarine

1 small brown (yellow) onion, thinly sliced

1 garlic clove, crushed

2 teaspoons fresh thyme leaves

200 g (7 oz) Swiss brown mushrooms, thinly sliced

200 g (7 oz) portobello mushrooms, thinly sliced

200 g (7 oz) cup mushrooms, thinly sliced

1/4 cup chopped fresh flat-leaf parsley leaves

1 quantity GF crepes (see Files)

 

 

1. Melt margarine in large frying pan over high heat. Add onion. Cook,

stirring, for 3 to 4 minutes or until tender.

 

2. Add garlic, thyme and mushrooms. Cook, stirring, for 5 to 7 minutes

or until mushrooms are browned and tender.

 

3. Add parsley. Stir to combine. Remove pan from heat. Cover to keep warm.

 

4. Meanwhile, make crepes.

 

5. Serve crepes with mushroom mixture.

 

 

Serves 6.
