Quick Tomato Relish

Preparation: 5 minutes

Cooking: 10-12 minutes

4 teaspoons cooking oil

1/2 small red onion, very thinly sliced

1 clove garlic, finely chopped

250 g (9 oz) cherry tomatoes, quartered

4 teaspoons barbecue sauce

2 teaspoons balsamic vinegar

1/4 teaspoon sugar

pinch ground turmeric (optional)

 

 

1. Heat oil in a small saucepan over moderate heat. Cook and stir

onion for 3 minutes or until soft.

 

2. Add garlic and tomato; cook for 2 to 3 minutes or until tomato

begins to soften.

 

3. Stir in barbecue sauce, vinegar, sugar and turmeric. Season with

salt and black pepper. Simmer, uncovered, for 5 minutes or until

relish thickens.

 

4. Store leftovers in a non-metal container, covered, in the fridge.

 

 

Makes 1 cup.
