Guest guest Posted March 17, 2008 Report Share Posted March 17, 2008 Char-grilled Zucchini with Black Olive Salsa 2 zucchini, sliced on diagonal olive oil 1/2 cup black pitted olives 1 lemon, juiced 4 tsp chopped flat leaf parsley 4 tsp chopped basil salt and pepper, to taste 1. Heat a char-grill pan on high. Drizzle both sides of zucchini with oil. Char-grill for 2 to 3 minutes each side until tender. 2. Combine the olives, lemon juice and herbs in a small food processor, process until almost smooth. 3. Season with salt and pepper, add enough olive oil to make a dressing. 4.
