I'm a busy single mom of a 20 year old son who was diagnosed with high functioing Autsim at age 15. When I am not at work I am at school painting, working on a degree in fine art. My son's Autistic symptoms improved drastically when we went gluten free without realising it last October. We went on the South Beach Diet and I could quickly see that he was no longer having hour long monolougues about whatever pokemon, digimon, or yugio charactor, thinking this was a conversation. He no longer was walking into walls. He was no longer rolling around on his bed screaming nonsense, doing what he called, " Going into convulsions. " We bagan having real conversations that we both could enjoy. We have both been gluten free since then. I have found that I fell " fine " for the first tiem in my life. I am no longer sick not knowing why. I feel " normal " now. Going gluten free has been easy. We can still eat fast food and we can still eat microwavable food that is cheap and easy. Going out to eat is difficult, because most of the restaurants that are noted on Celiac support lists as being gluten free are grills, meat and potato type places. There are not a lot of " meat analogues " (soy products that look/taste like meat) that are made without gluten, but there are a few. We get Sol Kitchen's burgers, and if you are in the US, Amy's organic has lots of gluten free/casein free. Our Asian market has some ham and chicken analogues that do not contain gluten. Your diet is going to consist of fruits and vegetables (fresh, frozen, canned, instant potatoes, whatever), gluten-free grains and starches (pilafs, breads, pastas), nuts and seeds, beans (canned is fine if you don't want to soak and cook them yourself), and soy if you tolerate it. I have recently been reading a number of " raw " cookbooks, which have lots of ideas for different kinds of salads, soups, sides, and desserts, even if you don't want to try their main course meals or breads, which often involve using specialized equipment. Good for if you are on a rotation diet or are tired of lettuce-and-tomato sandwiches every day. There are lots of recipes in the group's archives that you can take a look at to get ideas, even if you want to look for commercial products rather than making your own. Guest guest Posted March 15, 2008 Report Share Posted March 15, 2008 Hi Patti, I just wanted to let you know, in case you didn't like me when I first began gluten-free, fast-food french fries do contain gluten/wheat. You can verify that by going onto any fast-food restaurant chain's website and looking up nutritional information. I've checked every fast-food chain and they all contain wheat. It may not matter too much for you since it is not an intestinal issue with your family, but I thought I would give you a heads up. As was posted already, we do lots of beans, vegetables, tofu, TVP, tempeh, and brown rice. Not sure how to help with the no-cooking part - I cook everything! I can't afford not to!
