Guest guest Posted February 16, 2008 Report Share Posted February 16, 2008 Iced Apple and Mint Tea 1 litre/quart apple juice 1/2 sugar 3 cm (1 1/4 " ) piece fresh ginger, peeled, sliced 4 teaspoons black tea leaves 1/4 cup mint leaves, chopped ice cubes, to serve mint leaves, to serve 1. Combine apple juice, sugar and 2 cups cold water in a saucepan over medium-low heat. Stir for 3 to 4 minutes or until sugar has dissolved. 2. Add ginger. Bring to the boil. Reduce heat to low. Simmer for 5 minutes. 3. Remove from heat. Stir in tea leaves and chopped mint. Stand for 10 minutes. Strain into a jug. 4. Cover and refrigerate overnight or until chilled.
