Guest guest Posted February 16, 2008 Report Share Posted February 16, 2008 French Hot Chocolate 2 tablespoons (8 tsp) cocoa powder 2 tablespoons (8 tsp) sugar 1 litre/quart soy -OR- nut milk 1 cinnamon stick -OR- 1/4 teaspoon ground cinnamon 4 whole cloves 1 teaspoon vanilla essence (extract) 4 cm (1 1/2 " ) strip orange rind 1. Combine cocoa and sugar in a saucepan over medium heat. Slowly whisk in soy or nut milk. 2. Add cinnamon, cloves, vanilla and orange rind. Bring to a gentle simmer. Turn off heat and allow to infuse for 5 minutes. 3. Strain and pour into bowls. Serve. TIP: For a thicker, Italian-style hot chocolate, gently simmer the mixture for 10 minutes, stirring occasionally. Serve in small cups. Serves 4.
