We had heaps of tomatoes in the garden so I used fresh in the recipe. In place of the dried herbs I used a large handful of fresh basil. It was so tasty. This recipe doesn't make a huge amount - just enough for a small serving on ravioli for 4 or 5. You may want to double this recipe to serve on other pasta. This also makes a great sauce for pizza. Rich Tomato Sauce 1 can chopped tomatoes 1 onion, chopped finely 3 tsp olive oil 4 cloves garlic, crushed 1 teaspoon sugar 8 tsp tomato paste dried Italian herbs -OR- mixed herbs, to taste salt, to taste 1. Heat oil in a saucepan. Cook onion and garlic. 2. Add tomatoes, sugar, tomato paste, herbs and salt to taste. 3. Heat until boiling. Allow to simmer for a while to let the flavours combine.
